Hot Wings

Oh hot wings how I love you.  I had a serious craving for some wings.  My boyfriend and I went out and bought some wings.  Damian likes to leave the wings whole.  We made a delicious sauce with garlic, Franks wing sauce, added a little Franks sweet BBQ sauce, and a little Tapateo.

We ate sooo many wings.  Just posting this makes me want some more wings right now.  Yumm

Garlic Parm Bread Bites

I was inspired to make these after ordering pizza one night from Domino’s and getting their parm bites.  They are delicious.  I came across a recipe for parm pretzel bites and was inspired to make them myself.  The recipe called for some frozen bread dough, I decided I was going to make the dough myself so I made pizza dough.

I let the dough rise until double in size

I then portioned the dough into bite size pieces and let rest on a greased cookie sheet for 10 minutes.  The recipe I used called to boil the dough balls in water for 45 seconds.  I did this the first time and they came out good but I decided not to do this the second time around and just bake them instead.  They turn out really chewy when you boil them, if you just bake them they are much softer and more delicious.

I baked these at 400 degrees until golden brown.  In the meantime I melted about half a stick of butter with 2 cloves of garlic minced.  Once the bread balls came out of the oven I brushed them generously with the melted butter and sprinkled with garlic salt.  I then rolled them in Parmesan cheese that I mixed with more garlic powder and vuala yummy parm bites.

I have been trying to perfect my pizza dough for awhile now.  My boyfriend had the idea of using the cast iron skillet to cook the pizza.  It was delicious.  I even made my own alfredo sauce for the pizza.

Turkey and Biscuits


What better to do with leftover turkey than to make Turkey and Biscuits.  I went to the store and bought cream of chicken, chicken broth,  a roll of buttermilk biscuits, and some frozen peas and carrots.  I already had some onion and garlic so I used that too. First I saute some onion in my cast iron skillet. Then I added my garlic.  I added about a Tbls of flour and cooked for a minute.  I added some chicken broth to pick up all the brown bits.  I then added the cream of chicken soup and a little more chicken broth.  I cooked this a little then decided I should probably add a little milk to make it creamier.  I seasoned this with dried parsley, salt, fresh black pepper.  The key is to keep tasting and seasoning.  Once I felt I had a good filling I turned off the heat.  I pulled out the biscuits.  I pulled them apart and added them to the top of the filling.  I brushed the biscuits with butter and sprinkled them with garlic powder.  I bake at 375 or whatever the biscuit package says for about 20 mins until they were golden brown.  It was so good. 

Brussels Sprouts with Garlic and Bacon
I never thought I would be one to eat Brussels Sprouts.  Ewwwhh gross! I saw some fresh ones in the store over the holiday season and decided I must try to cook these.  So I bought some and to my surprise…..DELICIOUS. I was also pleasantly surprise when my brother prepared them for Christmas dinner.  His were very good, probably better than mine I must admit.
Measurements are approximate. I usually eyeball everything.
1-2 lbs. Brussels Sprouts
5 slices bacon cut into pieces
1 sm. to med. onion diced
2 cloves garlic
salt
pepper
2 Tbls. grated Parmesan cheese
Bring some salted water to a boil for blanching the Brussels Sprouts.  Next cut them into quarters.  Blanch the sprouts for about 5 mins.  Drain and put into an ice bath.  Cook bacon pieces until crispy and drain on paper towel lined plate. Cook onion in bacon fat until translucent.  Drain the Brussels Sprouts well. Add Brussels sprouts and garlic to the onions in pan. Season with salt and pepper to taste. Cook about 10 mins until Brussels sprouts are heated through and just starting to get brown. Add bacon, sprinkle parm on top, and serve.
